Salmon and sweet potato salad |
INGREDIENTS:
Raw salmon cut into strips
Sweet potato cut into cubes
Tomato cut into wedges
Japanese cucumber sliced thinly
Lettuce shredded
Large onion cut into rings
DRESSING:
Flaxseed oil (provides omega-3)
Balsamic vinegar (improves the immune system and is a great substitute for salad dressings)
A sprinkle of chia seeds (wonderful anti-oxidant)
A sprinkle of wheatgerm (powerhouse of nutrients)
Garlic & herb seasoning

Great looking salad. I'm slowly getting back on my salad diet after all that CNY indulgence. I have some sweet potatoes and will add them to my salad too.
